Mango Salsa


Cucumber and Mango Salsa
1/2 English cucumber
2 fresh mango or 2 cups frozen chopped mango
1/4 red onion, finely chopped
1/4 bunch fresh cilantro, chopped
1 lime
salt, to taste




  1. Slice the cucumber in half lengthwise and in half again lengthwise.
  2. Chop the cucumber into 1/4 inch pieces.
  3. Chop mango into 1/4 inch cubes.  Place in a bowl.
  4. Add onion, cilantro, and the juice of 1/2 of the lime to the bowl.  Toss.
  5. Add salt and more lime juice to taste.
  6. Let rest 30 minutes and serve.
NOTE:  This may be made one day ahead to really allow the flavors to blend.
