Mama's Sauteed Squash
4 squash
1/2 vidalia or other sweet onion
2T rice oil
1 T salt
1 t garlic powder
- Cut the squash into thin circles.
- Julienne the onion.
- Heat 2 T rice oil in a skillet.
- Add onion and toss to coat.
- Cook onion until it begins to soften.
- Add squash and toss to coat.
- Sprinkle with salt and garlic powder.
- Toss again.
- Cook squash on medium heat for 7 minutes or until it begins to brown.
- Stir and cook again until lightly browned.
- Serve alone or over rice.
